Throughout April, Sydneysiders will have a unique opportunity to broaden their culinary horizons because Peruvian chef Alejandro Saravia is presenting a five-course degustation of modern Peruvian cuisine.
Hosted at Splinters Waterfront Restaurant in Mosman, guests will savour dishes such as ceviche, lime bean cause, smoked duck and quinua with king prawns, as Saravia embarks on his mission to raise awareness of Peruvian culture in Australia. Diners will also experience that traditional Peruvian cognac, Pisco, served as aperitif cocktail the Pisco Sour, and each dish will be matched with an Australian wine carefully selected by wine specialist "By The Dozen".
Saravia arrived in Sydney from the Republic of Peru in 2006, and utilises Australian produce combined with Peruvian imports to prepare his dishes using both modern and traditional cooking techniques.
A taste of Peru is the first project from his company, Illapu Peru, meaning "Star of Peru" in Peruvian dialect Quechua. Five dollars from each ticket sold on the opening night will be donated to the NAZCA Dreaming Society Inc for their project "Our World Through Children's Eyes", a cultural education program for Australian and Peruvian Children.
